Castoro Cellars
The husband and wife team of Niels and Bimmer Udsen established Castoro Cellars in 1983 with the goal of producing world class wines from Paso Robles appellation grapes. The Paso Dragon Cabernet Sauvignon is hand-crafted from select vineyards from the Central Coast of California. The wines take advantage of the wonderful climate of warm invigorating days and cool nights.
Paso Robles
The international underdog of California AVAs, with iconic Oak trees throughout the Eastside and Westside vineyards. The Eastside's diurnal cycle is long hot days and cold breezy nights whereas the Westside microclimate is known for the cooling winds from the Templeton Gap and lesser growing degree days. Paso Robles, with its 11 sub-AVAs, is particularly known for its rich wines and dramatic temperature swings that enhance flavor and acidity.
